Pecorino Sardo DOP, the cheese of choice for great pesto, is made from sheep's milk: specifically, from the milk of the Sardinian breed. After a brief period in brine, the cheeses are left to ripen and age in cool cellars in central Sardinia.
Serves 2 to 3 people with pasta.
Ingredients: Pecorino Sardo D.O.P (pasteurised sheep's milk), extra virgin olive oil, pine nuts, fresh basil, sea salt and roasted garlic.
