Piri Piri Spatchcocked Chicken

Spatchcocked Piri Piri Chicken
Fantastic on the BBQ this bank holiday weekend, if you can brave the British weather! If not this works equally well in the oven.

Ingredients

  • 1 pack of Taste Collectiv Piri Piri; and
  • 1 medium chicken, spatchcocked.

By jointing the whole chicken like this, the flavour gets in every nook and cranny, plus it massively speeds up the cooking time.

Instructions

  1. Coat the chicken in the Piri-Piri; and
  2. Put on the BBQ for 25-35 minutes, or until cooked through, depending on your success with charcoal!
This equally will cook in the oven, 25-35 minutes on 180'C. Serves 4 as part of a BBQ feast.
